Easy healthy vegan meals and snacks for everyday life

These are one of everyday meals and snacks
 when I am too busy or too tired to cook; 

I make sure that my meals have all the important nutrients needed for a healthy  life in it

These meals are inexpensive, all the ingredients are easy to find; I try to add hemp seeds and flax seeds on my means for extra nutrients such as omegas and more. These meals and snacks have no secrets except how I flavor my food with minimum oiling.







Roasted chickpeas with marinating spicy tomato sauce, and flax seeds: On the side avocado salad the  with kale tomatoes and spinach, seasoned with lemon juice, basil and  garlic powder




Crispy roasted Tofu with my homemade sauce; made with nutritional yeast hemp seeds, 1/2 of water s, garlic, and basil sauce and cumin. On the side, Avocado salad with roasted red peppers and cucumbers  added lemon juice with Italian seasoning 

Roasted Carrot Penne with onions, flax seeds, parsley, salt, olives, and tomatoes 

Potato pie,; with carrots  made with4 potatoes, 1/2 cup of chopped carrots, 1/2 of flour, 2 tbsp of flax seeds, 1 smashed banana, baking powder, left in the oven for 20 on 410 F  and ready; roasted black beans with onions and hot sauce; Avocado salad on the size, with kale and red peppers, and tahini 

Roasted peas; with spinach salad, baked crispy potatoes with basil, cumin salt and flax seeds.






Boiled corn, roasted kidney beans with fried onions, cumin, and basil. 3 slices of baked potatoes seasoned with hemp seeds, cilantro, onion powder and basil.
A tasty simple meal, beans, and potatoes might be one of my favorites sources of protein. 




There is nothing so easy out there like this fruit bowl ;
On top of oats mixed with chia seeds, I mixed 3 bananas, 1 cup of blueberries, and strawberries  I ate with almond milk later on. Antioxidant with taste is a must, 



Avocado toast; in a separate bowl I mixed one avocado with slices of tomatoes, added lemon juice, basil, cilantro and garlic powder, I added on the toasted rye bread and was ready; This another  easy healthy vegan snack or breakfast 

Frozen blackberries smoothie bowl;I processed in the food processor 1 cup of blackberries, ,1 banana, 1/4 of almond milk, 3 Tsp  of coconut sugar 4 tbs of chia seeds; added more chia seeds and added oats; This is high in fiber, antioxidant, vitamin C, omegas, Potassium, fiber and more.


 Baked crispy eggplants, Cut in slices, seasoned with nutritional yeast, cumin, basil, salt, black pepper, in a baking sheet I placed the eggplants, added flax seeds, red peppers, 5 minutes preheat 350F and after 15 minutes was ready, crispy healthy and tasty.



fajitas with seasoned fried beans with flax seeds, , roasted seasoned rice and broccoli, kale salad, mashed sweet potatoes; This meal has approximately 16 g of protein, zinc, potassium, fiber, omegas, calcium and more; very nutritious and tasty










My blackberries smoothie made with 1 cup of blackberries, 1 banana, 3 tbs of Chia seeds 2 tbs of coconut sugar, and Almond Milk.
