Guacumuele salad with roasted chickpeas - High Protein Healthy Tasty Vegan Dish
Ingredients ;
For 1 person ;
1/5 cup of Chickpeas (9.5 g of protein )
3 cups of chopped Kale (approximately (10g of protein)
1/5 avocado ( 1.5 g of protein )
2 cups of chopped spinach ( approximately (3 g of protein)
1 chopped cucumber
1 cup of lemon juice Lemon juice
2 chopped chopped onions
salt ;
4 spoons of mustard
2 spoons of cilantro
4 spoons of coconut oil
3 chopped leaves of basil
oregano
Guacamole Salad ; in a big bowl ; smash the avocados , add 3 spoons of chopped onions mix it with it for 1 minute until become creme consistence ; add salt; black pepper, keep mixing ; add the chopped kale ; chopped spinach; 1/5 of lemon juice ; one spoon of coconut oil , basil and mix it for another 2 minutes.
Leave the guacamole salad on the site and trow the chopped cucumbers on top .
Pre heat the over to 400F for 5 minutes; trow the cooked chickpeas in a baked pan sheet with no stick coconut oil ; trow sale the rest of the chopped onions, cilantro , salt, black pepper , 1 spoon of coconut oil and oregano .
Leave it for 15 minutes and it is ready
Mix the roast
Mix with the guacamole salad and chopped cucumbers in a big plate
Make a mustard sauce on the side; mix mustard cilantro salt haply small spoon of coconut oil juice lemon juice on a small bowl and trow on top of it .
Now you have a healthy Vegan dish in which is tasty with high protein in it ;

Regardless of being organic ; There are vegetables and fruits that I recommend to be organic such as grapes, tomatoes and apples . You should always wash all your vegetables and fruits with a little salt and cold water .
Free GMO vegetables and grains are available everywhere .. Pick those just in case.
I recommend for those who are starting being vegan, to always buy packages chickpeas in package and learn how to cook them previously and leave on the side . Chickpeas is a great source of protein and more.
Always buy fresh kale ; Kale has gives a significant amount of protein, Omega - 3 , iron, B-12 and more. Kale is consider to be the healthiest food and it can be a great vegetable to use for cancer prevention .
Fresh Spinach is other vegetables that we should always have.
Despite that being vegan is not only about food and it is not only a diet , it is a permeant change to quit contributing to a life style that is not only hurting animals in a horrific inhumane violent way , it is hurting our health , our environmental , it is causing world hunger , it is causing a lot of damage . The only ones who can change the situation is our small choices and small contribution to create a small impact .
You can easily eat about up to 50 to 60 g of protein a day on a vegan life style ; it is a myth that Vegans doesn't get much protein, it can be quite the opposite once you understand what has protein in it, and almost everything has protein .
Let's just say , per instance ;
If you drink 1 to 2 cups of soy milk a day or maybe other nor dairy milk
Cups of oats for a home made oat meal with no dairy milks .
Almonds , walnuts , chia seeds , Pumpkin seeds .
Grains such beans ; brown rice, quinoa and so on.
Wheat breads , wheat pastas .
You will have easily by the end of the day have a great amount of protein and if you want build muscles , just make sure to eat a lot of plant based food that are high in protein such as grains, seeds, kale, green leafs and so on.
Animals are not the only source of protein and calcium , we are conditioned to think that they are since we are school , but they are not. There are over 80.000 plants on this planet eligible to be part of a great source of meal and give us great nutrients to live a healthy life . The great news is we can find everywhere in our local market . We just need to simply a plan , buy them , consume them often .
If lack of time is an issue, make a plan accordingly to the situation you are in . We all can create situation where We won't depend of quick unhealthy, cruel meals .
